What Is a Brownie?

A brownie is a dense, fudgy baked good made primarily from:

  • A small amount of flour

The high ratio of fat to flour, combined with melted chocolate, gives brownies their characteristic dense, fudgy texture. The word "brownie" first appeared in American cookbooks in the late 1800s, though the modern brownie — chocolatey, fudgy, baked in a rectangular tin — became standardised in the early 20th century.

What Is a Blondie?

A blondie follows essentially the same formula as a brownie but replaces the chocolate with brown sugar as the primary flavour component. The result is a butterscotch, caramel-forward flavour profile rather than a chocolatey one.

Key characteristics of blondies:

  • Made with brown sugar, which provides a deep, molasses-tinged sweetness
  • No cocoa or chocolate (though white chocolate chips are often added)

The Science of Fudginess (Both Have It)

The reason both brownies and blondies achieve that satisfying dense, fudgy texture is the high sugar-to-flour ratio and fat content. Lots of butter and sugar, relatively little flour, and careful not-overbaking. The eggs provide structure but also contribute to richness.

The specific ratio of ingredients — and crucially, when the eggs are added (you want the chocolate mixture to cool slightly before adding eggs, or you risk scrambling them) — determines whether you get fudgy or cakey results.

Which Is Better?

This is, of course, entirely subjective. Our honest view:

For pure chocolate satisfaction: brownies, every time. A well-made brownie with premium chocolate is a deeply gratifying experience in a way that nothing else quite replicates.

For those who don't love chocolate: the blondie is the answer. All the textural pleasure of a brownie, with a completely different flavour profile.

For maximum versatility: blondies accept add-ins (nuts, dried fruit, different chips) with great flexibility. Brownies have a more dominant flavour that dictates the accompaniments.
